If you have naughty children in your family who have the habit of taking the spicy top surface of the food (the mandingos will call it DORANG KOOSO), then Benachin is the solution for them. Despite which portion of the food they start eating first, the recipe is the same all the way to the end.

That gives the name Benachin ( one-food )

i have traveled to west africa (Gambia). It is nice to see that there are real africa inspired recipes on-line.

this was one my favorite dishes while i was there.

Onions was omitted on the list of ingredients. Use 1 or 2 onions.

On the preparation itself, you can add all ingredients together and simmer until like they said about 2 cups of water remains.

It tastes good. We had a Bah kunda family 4th of July cookout in Vancouver U.S.A. Musa Sonko cooked a delicious superkanja despite the fact it was a little (watta) (watta).
